Cách làm
– Khổ qua mua về chẻ đôi, cạo sạch ruột(bỏ cả phần màu vàng bên trong ruột) cắt thành sợi từng miếng độ 3cm, ướp muối vào khổ qua cho bớt đắng, để khoảng 1 giờ
Đem khổ qua ra xả nước lạnh, vớt ra để ráo nước.
Nước lóng phèn cho khổ qua vào ngâm, đem phơi nắng cho đến khi nào trở thành màu trắng đem xả lại nước lạnh.
– Giấm thắng với đường và chút muối vừa ngọt, để nguội. Cuối cùng xếp khổ qua vào keo, chế nước giấm vào để khoảng 7 ngày là ăn được.
